当店のナポリピッツア: 生地はイタリアの小麦粉と水、海塩、酵母のみでつくり、36時間 以上熟成させ、手でコルニッチョーネと言われる額縁をつくり、400°Cを超える高温にて 一気に焼き上げます。小麦粉の風味、生地の旨味、食感をお楽しみ下さい。
Our Napoli Pizza dough is made of Italian flour and water, sea salt, and yeast alone. Then it is aged for more than 36 hours. We make a frame, which is called ‘Cornicchone’ , by hand, and bake at a high temperature exceeding 400 °C. Please enjoy the flavor of the flour, and the “umami” and the texture of the crust.
